COCOCORO (コココロ) "SHINOBU" VG-10 all steel knife 200mm

The steel material of the blade part is "VG-10 (V Gold No. 10)" made by Takefu Special Steel, Fukui Prefecture. By incorporating carbon, chromium, molybdenum, vanadium, and cobalt into iron, this is an ultra-high-performance steel material for cutlery that achieves high levels of hardness, wear resistance, durability, impact resistance, and corrosion resistance. All blades are made of VG-10 "all-steel" instead of "interrupt" or "three-layer steel" which is made of soft iron with a thin layer of steel sandwiched in the core. The thickness of the blade gradually tapers from the root to the tip, reducing the surface area that touches the food and reducing side resistance.
