- Adopts VG-10, a high-grade stainless steel cutter steel that Japan is proud of to the world. It is a well-established theory that so-called "steel" carbon steel cuts well but is prone to rust, while stainless steel is resistant to rust but has poor sharpness, but VG-10 combines the best of both, "cuts well and is resistant to rust." It is an ideal steel material. - Damascus steel has a fascinating pattern reminiscent of the ripples on a beautiful Japanese sword. The Damascus steel used in this knife has 33 layers, and the pattern created when the core material, VG-10, is sandwiched between 16 layers on both sides for forging. By sandwiching the highly hard core material VG-10 between relatively soft stainless steel materials, the blade has both sharp cutting ability and strength (toughness) against blade spills. - A full-fledged knife for commercial use that can withstand hard use. In order to meet professional hygiene standards and hard use, the blade and ferrule are welded together to provide corrosion and water resistance. The core shape of the handle is straight through (a shape where the steel passes through to the end of the handle = full tang). The handle material POM is made of a durable material (resin) that has a heat resistance temperature of 150℃, and is firmly caulked in three places, making it very sturdy. The weight is well balanced, so you won't get tired even when using it for a long time, and it is a knife with a durable and hygienic structure that can withstand hard use. -In recent years, Santoku style knives have received high praise overseas as well.
